Banana Bread French Toast

Time: Prep 5 minutes, Cooks 5-8 minutes
A rich and decadent breakfast, this French toast is so tender and sweet on it’s own you won’t need any syrup. Using left over, slightly stale banana bread helps the egg absorb nicely and leads to perfectly moist French toast (but fresh bread is okay too). Here is my banana bread recipe that works best with this French toast. Top with flambéed bananas, this breakfast will satisfy any sweet tooth.
Ingredients:
4 slices banana bread
3 eggs
Vanilla
Granulated sugar
Cinnamon
Nutmeg
Kosher salt
Unsalted butter
3 bananas, halved lengthwise
Brown sugar
Dark rum
Directions
Step One:
Whisk together eggs, a capful of vanilla, 1-2 tbsp. sugar, and a sprinkle each of cinnamon and nutmeg. Add a pinch of kosher salt and combine. Soak slices of banana bread in egg mixture for a few seconds on each side.
Step Two:
In a skillet add a few knobs of unsalted butter and melt completely. Fry slices of bread in butter over medium-low heat for 3-4 minutes on each side or until browned and crispy.
Step Three:
While toast is cooking, melt a few more tablespoons of unsalted butter in another skillet over medium heat. Sprinkle about 1 cup of brown sugar in butter and stir to dissolve. Add bananas and spoon butter and sugar over to coat. Add about a capful of vanilla and a pinch of salt. Let bananas caramelize for 2-3 minutes.
Step Four:
Increase heat to medium-high. Add about 1/3 cup (a few turns around the pan) of dark rum to bananas. Let bubble for a few seconds. Using a lit match or lighter, carefully set the rum ablaze. Shake pan while flambé is lit until flames dissipate. Remove from heat.
Step Five:
Spoon a few bananas over two slices of toast and sprinkle with powdered sugar if desired.

Try this recipe with any type of sweet bread you have on hand. Pumpkin bread, chocolate chip, lemon poppyseed- all would work well as French toast! Don’t like bananas? Sub with any other hearty fruit (apples, pears, etc.) for an equally delicious breakfast!
